Winter is the best time for baking. Your home fills with mouth watering scents, and anything loaded with carbs is high on the comfort food list. We bake every week here on the farm. It's either breads, cakes, or muffins on the menu, while biscuits and rolls are on the daily list. Before you think that all the baking means no time for other things, think again. Using a combination of hand kneading and bread machine, I manage to keep the baked goodies coming and still have time to get plenty more done. Don't listen to the naysayers who claim that bread made in the machine is somehow inferior. Kneading by hand is satisfying, especially when I am trying to work out a particular problem, but making it with the machine is so much more efficient. The dough cycle is my best kitchen friend.
