Summer is ideal for light and refreshing salads with a crunch. No vegetable gives quite a bite like the humble cucumber. This simple cucumber salad will be your go-to side dish for the remainder of the season. The recipe only has 5 ingredients and can be thrown together in a jiffy. The best way to create thin even slices is using a mandoline slicer or a food processor. You can certainly do it by hand but it is more tedious and time consuming. Since the cucumber is very forgiving, the longer this salad sits, the more flavor it develops. Also, this salad is a great starting point to create other vibrant cucumber salads. You can add a pop of color with tomatoes or richness with cheese crumbles.
Dill Cucumber Salad
Ingredients:
1 large English cucumber, thinly sliced
1 large shallot, thinly sliced
2 1/2 to 3 Tbsp white wine vinegar
3 tsp honey
2 tbsp dill, finely chopped
kosher salt and freshly ground black pepper, to taste
Directions:
Step 1: In a large bowl, whisk together the white wine vinegar, honey and chopped dill. Add the cucumber and shallots and mix until the slices are well coated with the dressing. Season with salt and pepper, taste and adjust as necessary.
Step 2: Refrigerate the salad for at least an hour to allow the ingredients to marinate. Serve cold.
