Mother's Day Pinata Hat Cookies

Surprise your mother with these delightful pinata hat cookies from Hungry Happenings.  The hats are constructed using a cake ball maker and a scalloped cookie cutter.  They can be colored to match the decor or your mom's favorite color and decorated with a mixture of fondant, modeling chocolate, candies, and sprinkles.  The best part is when you crack one of these babies open and candy comes spilling out.  Not only will this bring joy to the table but also show mom how much you care for her.

Pinata Hat Cookies
makes 12-15 cookies
Recipe from Hungry Happenings

Ingredients:

For the cookie dough:
4 cups (17 ounces) all purpose flour
3/4 teaspoon salt
3/4 teaspoon baking powder
1 cup butter, softened slightly
1 1/2 cups sugar
2 large eggs
1 1/2 teaspoons vanilla bean paste or pure vanilla extract
3/4 teaspoon almond extract
gel food coloring

For the decorations:
4 to 6 ounces modeling chocolate* or fondant
corn syrup
2 to 4 tablespoons royal icing (or store bought cookie icing to match cookie color)
candy (about a tablespoonful per cookie)

Supplies:
Bake Pop Pan or other cake ball pan
3 to 4 inch scalloped round cookie cutter (based on the size of your cake ball pan)
2 1/2 inch round cookie cutter
JEM 5mm strip cutter #2 (or use a pizza cutter), optional 
small daisy plunger cutter
small round plunger cutter
