While you are watching the boys on the field throw around the pig skin, you can comfortably enjoy enjoy a tray of cheesy bacon potato skins. This easy appetizer can be made for 2 or 200 people and the amount of work is almost the same. Cooking the potatoes takes some time but throwing the appetizer together requires less than five minutes. These skins are made on the conservative side (i.e. with only a few toppings) but you can customize these potato skins to suit you. In other words, use this recipe as a guideline and invent your own version of potato skins. Other delicious toppings include spice sour cream (sour cream mixed with your favorite hot sauce), jalapenos, or breadcrumbs for added crunch. You can also flavor your skins after your favorite comfort food dishes like pizza, hamburgers, or buffalo chicken wings.
Cheddar Bacon Potato Skins

4 Large Russet potatoes, cooked until tender
2 cups of extra sharp cheddar, shredded
10 slices of bacon, cooked until crispy and crumbled
1/2 cup of scallions, chopped
olive oil
kosher salt and freshly ground pepper to taste
