Back to School Breakfast: Baked Apple Walnut Oatmeal

This fall, enjoy baked apple walnut oatmeal from Thyme 4 Food for your morning meal.  This a great breakfast recipe to prepare while the kids are getting ready for school.  Quick cooking oats are combined with fresh apple, golden raisins and buttery walnuts to make this scrumptious breakfast.  For a nutritional boost, ground flax seeds are added to the oatmeal.  You can prepare this dish the night before to eat the next day.

This same recipe can be made with the remaining summer peaches available at the market or pears too.

Baked Apple Walnut Oatmeal

2 cups quick oats
1/2 cup ground flax seeds (optional)
1 cup milk
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup walnuts
1 whole apple, diced
1/2 cup brown sugar
1/4 cup golden raisins
1 1/2 cups applesauce
1 teaspoon vanilla
2 teaspoons cinnamon
 
Preheat the oven to 350º F.

Mix all ingredients in a bowl. pour into a well greased baking dish.
 
Bake he oatmeal for 40-45 min.
 
Garnish the oatmeal with apples and walnuts
