Converting to a gluten-free lifestyle can be difficult at first but once you get past the transitional period, it becomes second nature.  You have to re-train yourself to shop by paying special attention to labels and the list of ingredients.  This also goes for gluten-free cooking and baking.  But do not fret my friend, help is on the way.  When baking gluten-free goodies there are a few tips that will make your life easier.  When first attempting gluten-free recipes, stick to them.  There is no "one size fits all" flour blend that will work for every recipe.  After you've practiced and become masters at baking a gluten-free cake or cookies, feel free to play around with making your own all-purpose flour mix.  Cookies are great for beginners.  The dough is relatively the same compared to their wheaty cousins and if the recipe is good, most people won't be able to tell the difference.  Below are five cookie recipes that will give you the confidence to conquer gluten-free baking.
