Soft raspberry cookies from The Tough Cookie symbolize the coming of summer. The cookie dough closely resembles that of a sugar cookie with the addition of of lemon zest and raspberry jam. Before baking, the cookies are rolled in coarse sugar to create a crunchy exterior which is a nice contrast to the soft center.
