Red Velvet Brownies

1 cup unsalted butter
4 oz dark chocolate, coarsely chopped
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
1 tablespoon red food coloring
1 1/3 cups all purpose flour
1/2 tsp salt
2 – 8oz blocks cream cheese, room temperature
2/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
