What a taste sensation! Brownie cookies, filled with a delicious fluffy peppermint fluff. These are so delightful, your guests will never dream they are also gluten and dairy free!

2 ounces bittersweet chocolate, chopped
4 ounces semi-sweet chocolate, chopped
1/2 cup palm shortening (Spectrum Organics)
1 cup organic evaporated cane sugar
3 large organic eggs
2 teaspoons vanilla paste (Nielsen Massey)
1 teaspoon ground espresso
1/2 cup organic white rice flour
1/4 cup sorghum flour
1/4 cup tapioca starch
1/3 cup cocoa powder (Pernigotti)
1/2 teaspoon aluminum free baking powder
1/2 teaspoon kosher salt
For the Filling:
*Note: Will need a candy thermometer
1 1/4 cup PLUS 1 tablespoon organic evaporated cane sugar
1/4 cup PLUS 1 tablespoon water
3 large organic egg whites, room temperature
1/4 teaspoon peppermint flavor (Simply Organic brand)
For garnish:
2 candy canes, crushed
