French-German Gumbo with Duck and Bratwurst

Traditionally, hearty gumbo is a Louisiana Creole dish that combines the "holy trinity" of green pepper, celery and onion, plus rice and a meat like sausage. This gumbo from Cooking Sens uses French-inspired duck and German bratwurst instead of sausage, then incorporates a few extra shrimp for good measure.

French German Gumbo

Ingredients:
Duck
4 whole duck legs
Creole seasoning
2/3 cup vegetable oil
1 onion, quartered
2 garlic cloves, quartered
Leaves from 2 celery branches
4 sprigs fresh thyme
2 bay leaves
1 tsp mixed peppercorns
2 quarts water

Gumbo
2/3 cup flour
1 large onion, chopped
4 garlic cloves, chopped
1 green bell pepper, chopped
2 celery branches, sliced
1 tbsp Creole seasoning
1 tbsp gumbo file
5-6 bratwurst, browned and sliced
1 lb shrimp, shelled and deveined
1 tbsp gumbo file
Sliced scallions
