Sweet Potato Cake With Chocolate Cream Cheese Frosting
2 mediums or 1 large sweet potato (about 12 ounces)
3 teaspoons baking powder
1/4 teaspoon ground cloves
5 eggs, separated
2 1/4 cups sugar
1 tablespoon stick plus 2 (5 ounces) unsalted butter, at room temperature
1 1/2 teaspoons vanilla extract
