Best Chowda Eva!

Our first communal dinner with our new neighbors, was a delicious pot of Maine Chowda. It was a mashup of clams, lobster meat, potatoes and milk (with a few extra ingredients that we aren't a privvy to this early in the relationship). After you try a good chowder, you will forever be in search of the perfect combination of ingredients. 

This recipe for the Best Lobster Chowda Eva! is as close as one can get to perfection, without knowing the lobsterman who caught the ingredients. 

Best Lobster Chowda Eva!

3 slices Oscar Mayer thick cut bacon, or the like
2 tablespoons each chopped shallot, garlic, red onion
3 tablespoons European butter; 1 tb when sauteeing shallot, garlic and
1 cup clam liquor (take care not to put any sand into your chowder!) or bottled clam j
1 tablespoon or so, fresh thyme leaves removed from stem (to avoid a woody flavor)
