Get rid of your winter blues with a bit of color and sunshine! These Rainbow Cupcakes will provide the right amount of cold-weather comfort while reminding you of warm spring weather. And, they look pretty delicious too! Make sure you have some creme fraiche and a whole lot of food coloring before you start baking.
Rainbow Cupcakes
Ingredients:
- 200g unsalted butter, softened
- 50ml sunflower oil
- 225g creme fraiche
- 350g caster sugar
- 4 tsp vanilla extract
- 4 medium eggs
- 475g plain flour
- 3 tsp baking powder
- rainbow of food coloring (paste works best)
- icing sugar, for topping
