Southern fried catfish is a classic Fat Tuesday dish. Whole catfish filets are dredged in cornmeal and then deep fried until golden brown. A trick to tame the strong fish flavor is to soak the filets in buttermilk for 30 minutes before frying them. You can serve your cornmeal crusted catfish with coleslaw, fries, and lemon wedges.
Ingredients:
1/4 cup flour
3/4 cup yellow cornmeal
1/4 teaspoon garlic powder
2 teaspoons salt
4 catfish filets or whole dressed catfish
Vegetable oil
Directions:
Combine flour, cornmeal, garlic powder and salt. Coat catfish with mixture, shaking off excess. Fill deep pot or 12-inch skillet half full with oil. Heat to 350 degrees. Add catfish in a single layer, and fry until golden brown, 5 to 6 minutes, depending on size. Remove and drain on paper towels.
