Indian Aloo Gobi

Aloo gobi is a traditional Indian side dish made with cauliflower and potatoes.  This recipe from Crave Cook Click is made with a ton of fragrant spices, tomatoes, ginger, and chili.  Aloo gobi pairs with a myriad of other Indian dishes including raita, pita bread, and Basmati rice.  This spicy vegetarian side will please everyone at the table.

Aloo Gobi

Ingredients:

1 cauliflower cut into small florets
4 potatoes cut in cubes
2 onions chopped
2 tomatoes chopped
6 green chillies sliced
2 inch ginger chopped
2 tbsp red chilli powder
1 tbsp turmeric powder
1 tbsp cumin powder
1 tbsp mustard powder
1tbsp garam masala
1 bay leaf
few cloves
oil
salt as per taste
chopped coriander for garnishing
 
Directions:
 
Heat the oil in a pan.
 
Stir fry the cauliflower florets and cubed potatoes in oil. Remove once they are half cooked. Keep them aside.
 
In another pan, heat oil.
 
Add bay leaf, cloves and sliced onions. Sautee for 10 mins. Now add chopped ginger.
 
Now add chillies and tomatoes. Mix everything well and let it cook for 5 mins.
 
In a small bowl mix turmeric powder, chilli powder, garam masala, cumin powder and mustard powder with water.
 
Add this mixture to the pan. Mix everything well.
 
Finally add cauliflower florets and cubed potatoes to the masala. Add some water and let it cook for 10 mins.
 
Garnish with coriander leaves and serve it hot with phulkas.
