Celebrate the 4th of July with a Patriotic Poke Cake

Celebrate 4th of July with this patriotic poke cake from The Galley Gourmet.  This cake made by baking two white cakes.  You can use your favorite white cake recipe or use boxed cake mix.  Once the cake has cooled, holes are poked on the top (hence the name) and blueberry and strawberry flavored syrup are poured over the top. To finish this fun patriotic poke cake, frost the cake in whipped cream.

 

 

Patriotic Poke Cake
Serves 12-16

For the Cake:

2 1/4 cups cake flour
1 Tablespoon baking powder
1/2 teaspoon kosher salt
1 1/4 cups buttermilk, at room temperature
4 extra large egg whites, at room temperature
1 1/2 cups granulated sugar
8 Tablespoons (4-ounces) unsalted butter, at room temperature
1 1/2 teaspoons pure vanilla extract

For the Syrups:

1 cup blueberries
1 1/4 cups water, divided
1/4 cup granulated sugar, divided
2 Tablespoons berry-flavored gelatin
3 drops of blue food coloring
1 1/2 cups sliced strawberries, hulled
1 Tablespoon strawberry-flavored gelatin

For the Topping:

3 1/2 cups whipped cream
3 1/2 Tablespoons granulated sugar
2 packets of whipped cream stabilizer
