Grilled Salmon Salad

The summer calls for light and refreshing meals that don't weight you down like this delicious grilled salmon salad.  Salmon filets are grilled to perfection and then glazed with a honey balsamic sauce that is so easy to make, you'll want to put it on everything.  This recipe is very basic, composed of simply romaine lettuce and salmon.  You can always add more ingredients like potatoes or tomatoes to make for a heartier meal but you want the salmon to be the star.  Grilled salmon salad is a dish you'll be making all summer long.

Salmon Salad 

Ingredients:

4 salmon filets
2 tablespoons olive oil
Salt and pepper to taste
1 onion, chopped
2 cloves garlic, chopped
6 tablespoons balsamic vinegar
2 tablespoons honey
1 head of Romaine lettuce
2 lemons, quartered

Directions:

Pour olive oil into a skillet and heat on medium high. Sauté onion and garlic in pan until onion is clear. Set the onion and garlic aside. Place the salmon in the skillet and sear for four minutes on each side (until opaque in the center and brown on outside). Set salmon aside. Pour vinegar and honey in skillet and heat on high until reduced to glaze. Tear up the lettuce and place on plates. Set the salmon on the bed of lettuce. Put the sautéed onion and garlic on the salmon. Drizzle the glaze over everything. Add lemon wedges to squeeze.
