These Dr. Pepper cupcakes from In the Nic of Time transform your favorite soda into dessert. Rich chocolate cupcake batter is spiked with the soda to give it that distinct Dr. Pepper taste (you can even do this Coke). Each one is frosted with a chocolate ginger buttercream that is absolutely dynamite. To serve, place each Dr. Pepper cupcake in the iconic soda can and top with a maraschino cherry.
Ingredients:
Cupcakes:
1/2 cup butter
2 1/2 cups brown sugar
3 eggs
3 oz unsweetened baking chocolate, melted
1/2 cup buttermilk
2 1/2 tsp. baking soda
1/2 tsp. salt
2 1/2 cups cake flour
2 tsp. vanilla
1 cup boiling Dr. Pepper
Frosting:
1/3 C soft butter
3 C confectioner's sugar
1/2 C dark cocoa
4 Tbs heavy cream
1 tsp freshly grated ginger
1 can cherries in syrup (or in liqueur)
