Jump into spring with this warm Fingerling potato salad with peas from Feasting at Home. Fingerling potatoes are cooked until tender and tossed with a mix of mustard seed, tarragon, and sweet spring peas. If Fingerling potatoes are unavailable to you, feel free to substitute with any small waxy potato. Tarragon is a delicate herb with an anise flavor which pairs beautifully with mustard seeds and peas. Mint would also work in this dish. Warm Fingerling potato salad with peas is guaranteed to be a favorite at your next picnic, party, or family dinner.
Ingredients:
1 lb fingerling potatoes ( or new potato)
2 cups fresh peas
1 C packed Italian parsley
1/4 C packed tarragon leaves
1 garlic clove
1/3 C olive oil
1/8 c lemon juice
1/2 tsp salt
1 T whole grain mustard
1 T capers
5 scallions
1/2 C chopped celery
lemon zest
