My grandmother used to make rice pudding. Hers was the best I have ever had, but that may the sprinkling of sweet memories this recipe has. Hers also had raisins in it, which I would pick out and set on the side of my plate. Although I do not like cooked raisins (we all have flaws), rice pudding just doesn't seem complete without them.
Simple Rice Pudding
1 1/2 cup rice
3 cups water
1 1/2 tsp salt
1 can Evaporated milk
2 eggs
1 tsp vanilla
1/4 tsp nutmeg
Mix rice, water and salt in a heavy saucepan.
Cover and bring to a boil. Reduce heat and simmer gently for 15 minutes.
Stir in milk and beaten eggs.
Raise heat to medium and continue to heat until mixture is heated through.
Add vanilla and nutmeg.
Enjoy!
