Whenever I go grocery shopping, I pick up two broiler chickens. I roast both of them at the same time, using one that night for dinner and the other to make another dish later on in the week. The roasted chicken recipe I use is very simple, requiring few ingredients. This little bit of extra effort in the beginning of the week saves me time during the rest of the week, allowing me to relax. Don't forget to use the bones to make fresh chicken stock.
