Chicken Chow Mein is an ubiquitous item on Chinese menus. Everyone loves it, but who doesn't like chicken and noodles? I have changed the classic recipe a little by omitting cabbage and bean sprouts (my own personal taste) and added vibrancy to the dish by including bright green snow peas. I would also add some minced red chili for a spicier touch. Serve this dish on its own or with rice.
¼ cup vegetable oil
½ teaspoon pepper
3 cups thinly sliced celery
4 oz snow peas cut lengthwise
1 can (4 oz.) water chestnuts, sliced
2 teaspoons orange juice
1 cup chicken broth
2 ½ tablespoons cornstarch
2 cloves minced garlic
3 tablespoons soy sauce
2 cups sliced chicken
2 Tablespoons minced ginger
½ pound Chow mein noodles
