Bacon Maple Cookies

Bacon has risen above the ranks of its fellows and become a celebrity. I do not know why America has become bacon obsessed. I mean, we all know the salty crunchy strips are tasty but then again they always have been. Maybe it is in response to the vegetarian/vegan movement? Bacon has been making an appearance in all kinds of foods like ice cream, cupcakes, and cookies are no exception. I first had these cookies at a farmer’s market in Portland, Oregon and have not forgotten about them. I hope you enjoy them as much as I did.

P.s. If you want to be really naughty, you can mix 2 tablespoons of maple syrup with 1 cup of powdered sugar and glaze your cookies

Ingredients:

1 cup butter
¾ cup packed brown sugar
¾ cup sugar
2 eggs
2 tablespoons Maple syrup
2 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
1 pound bacon

I am new to cooking & baking, and I made these cookies... turned out so good and so unique! I am bringing these in to work tonight and I just know that everyone who is willing to try them will love them! The only thing is (for me) making two pounds of bacon and slicing it up took around an hour. The rest of it was fast! I recommend shredding the bacon before you fry it! Such a great recipe! I cook about 16 pounds of bacon once a month for a women's breakfast. I cook it in the oven on 400 F in disposable aluminum pans, becuase it's not worth the time it takes to clean the broiler pans. From start to finish is about 2 hours. I'm only limited by the size of m yoven.
