Cinco de Mayo is here! And Mexican food is on everyone's mind.

Instead of eating tacos or burritos (even though incredibly delicious) why not try and make some chile rellenos, chiles stuffed with cheese and then battered and fried. My dad loves this dish and prefers it with a nice helping of rice, beans, and chips.

Chiles Rellenos
10 Anaheim or Poblano chiles
1 pound Monterey Jack Cheese, shredded (Use Queso Asadero for a more authentic flavor)
2 cups flour, seasoned with salt and pepper
4 eggs, separated
1/2 teaspoon salt
2 cups vegetable oil for frying
