Dark corn syrup is corn syrup with a small amount of refiners' syrup (a type of molasses derived from sugar cane), caramel flavor, sodium benzoate, salt, and caramel color. It has a medium brown color and a much more assertive flavor. Dark and light corn syrup can usually be used interchangeably in recipes, although dark syrup will add more flavor.

Dark corn syrup is often used as a sweetener in candies, frostings and jams because it doesn't crystallize. It is also used in frozen desserts because it prevents ice crystals from forming. In Asian dishes, dark corn syrup is used to balance sweet and sour flavors.
Conserving and Storing
Store dark corn syrup indefinitely in your refrigerator or in your pantry at room temperature, even after the bottle has been opened. The syrup will pour more slowly if it has been stored in your refrigerator.
