Scamorza
About
An Italian cows' milk cheese, not unlike mozzarella. It is a stretched, curd cheese. This means the fresh curd ages for several hours. The cheese is white unless smoked when it takes on an almond rind with a lighter paste. Scamorzza is usually found in Southern Italy as opposed to Northern Italy. It's popular in Neapolitan cooking.
