Lemon Cake

Ingredients

cup sugar (caster)
2 cups flour, plain
75 grams butter

Preparation

Grate rind from lemon.

Melt butter.

Whisk eggs and sugar over low heat until warm. Beat on high speed of mixer for about 5 minutes until thick, light and fluffy.

Sift over flour and carefully fold in with lemon rind. Fold through butter.

Pour into greased cake tin and bake at 350F/190C for 30 minutes.
