About
Tahini is a sauce made from ground raw sesame seeds. It is very popular in many cuisines, especially in the Middle East.
The solids in tahini tend to separate from the oils; store jars upside down in the refrigerator to make it easier to mix.

Physical Description
A thick,creamy, sticky paste that is sold in jars.The tahini paste and the oil usually separate and must be well mixed before using.
Colors: There are two types- light, ivory colored tahini, and a darker, more amber hued one

Conserving and Storing
You can store an unopened container of tahini at room temperature but once opened the paste should be refrigerated to prevent the oil of the paste from going rancid.
