About
Dry, mild cow's milk cheese that crumbles easily into fine bits. Often sprinkled on top of soups, beans, and tacos. Named for the town of Cotija in Michoacan, Mexico.
Cotija is sold in small pressed rounds or already grated. It can be found in Mexian markets and is increasingly common in general supermarkets in the U.S.
