Swedish Pancakes

Ingredients

2 1/2 cups flour
2 1/2 cups milk
2 teaspoons salt
1 tablespoon butter

Preparation

Beat together flour and 2 cups of the milk; add salt. In a separate bowl, beat eggs, then add remaining milk; combine the two mixtures.

In a skillet, melt the butter over low to medium heat. Add melted butter to the batter. Pour a little batter into the skillet and let cook until edges start to lift up. Then flip and cook a little more.

Well, as a Swede, I'd like to comment that when we do pancakes, instead of 2 1/2 cup of milk - use 5. It's like the ground recipe for how to do pancakes in Sweden, twice as much milk as flour, or maybe a liiittle more flour than milk. Then fry the pancaces as thin as possible without them falling apart. :)
