Karela is a very famous vegetable in India nad pakistan. It is used widely in the Caribbean and Asia. Bitter melon is eaten to improve digestion.

Physical Description

4-6 inch in size.
The fruit has a distinct bumpy looking exterior and an oblong shape. It is hollow in cross-section, with a relatively thin layer of flesh surrounding a central seed cavity filled with large flat seeds and pith. In unripe fruits,seeds and pith appear white and ripen to red.

Colors: Green fruit varies from pale to dark green, riper fruits are yellow

Preparation and Use

Cleaning: Thoroughly wash outside of fruit and dry. Cut lengthwise through the middle and scoop out the seeds and white pith.Discard. Cut green flesh into thin rounds. Sprinkle liberally with salt and let sit for 20-30 minutes. Squeeze moisture from fruit. Rinse and use.
