Chipotle Chili Tilapia Salad

Ingredients
8 ounces tilapia
1 tablespoon lime juice
1/4 teaspoon chipotle powder
1/2 teaspoon chili powder
1/2 teaspoon cumin
4 tablespoons light sour cream
1 tablespoon lime juice
1/2 small avocado
1/4 teaspoon chipotle peppers in adobo sauce, finely chopped
1/2 cup red onion, chopped
1/2 cup yellow bell pepper, chopped
1/4 cup lime juice
1/2 cup black beans, rinsed and drained
1 tablespoon jalepeno pepper , diced
1/2 cup cilantro, chopped
4 cups romaine lettuce, chopped

Preheat oven to 350.

Cover cookie sheet with foil, and spray with olive oil cooking spray.

Place tilapia on cookie sheet and sprinkle with 1 tablespoon lime juice, chipotle power, chili powder, and cumin.

Top romaine with tilapia, salsa and sauce.

Smoky chipotle chili spices up these light and flaky tilapia fillets. Serve them on a bed of lettuce with onion, peppers, and black beans, along with a creamy chipotle and avocado dressing.
