New Orleans Gumbo

Ingredients
4 slc bacon diced
2 onions diced
1/2 green pepper diced
1 stalk celery diced
28 ounces canned tomatoes undrained (28 to 30)
9 ounces frozen okra sliced
4 cups cooked rice or more
1 can shrimp drained (opt.)

NOTES : Mom just called this okra and tomatoes. I usually buy presliced frozen okra.

This could be cut down considerably by only using 1-2 slices of bacon or substituting turkey bacon for pork bacon.Other than the bacon it is relatively fat free. We always ate it over lots of hot cooked rice.
