Egg Blt

Ingredients

2 slices of cooked bacon, halved
Slice of avocado or tomato (if in season)
2 pieces of cheese, like a not-too sharp white cheddar, or Gruyer

Preparation

Toast the english muffins.

Melt the cheese on one half of the muffin.

Spread the mustard on the other half.

Repeat for second muffin.

Cook your eggs as you like them.

Season with salt and pepper.

Dress the greens in the vinegar, EVOO, salt, and pepper.

Build your sandwich.
