Citrus Bars

Ingredients

1/4 cup Icing sugar, (2oz)
3/4 cup Plain flour, (6oz)
3/4 cup Unsalted butter, (6oz)
2 wholes Zest juice of 2 lemons,
3/4 cup Whipping cream, lightly whipped (6fl oz)
3/4 cup Sugar for base
3/4 cup Sugar for filling
1 whole Zest of lemon, lime

Preparation

Sift the flour, sugar and salt into a bowl. Rub in the butter until it look like breadcrumbs, and stir in the lime zest. Press this mixture into a greased pan (9 x 13 inch) and bake at 325 F for 20 minutes.

Whisk the eggs, sugar, lemon juice and rind until well combined. Pour over the warm base and return to the oven for 40 minutes until set.

Cool before cutting into bars and dust with icing sugar.
