Forked Potatoes

Ingredients

1 pound new red potatoes, unpeeled
1/2 medium sweet onion, minced
1 tbsp lemon juice
1/2 tbsp extra-virgin olive oil
1 tsp coarse sea salt
1 tsp cracked black pepper
1 clove garlic, minced
2 tbsps minced fresh chives

Preparation

Cook potatoes with skins on in heavily salted boiling water until tender, approximately 15 minutes.

Place potatoes in a large bowl and smash using a large fork. Keep mostly chunky.

Fold in remaining ingredients and serve immediately.
