Potato Pancakes

Ingredients

4 potatoes, medium
1 onions, medium
1 tablespoon flour, plain
teaspoon salt
teaspoon pepper, black

Preparation

Peel potatoes and grate on medium grater, drain off liquid and measure 3 cups of potato. In a large bowl combine grated potato, onion, eggs, flour, salt and pepper. Mix well, stirring gently.

Heat oil in frying pan to the depth of 3mm. Drop 1 heaped tablespoon of mixture into hot oil. Flatten with a spatula to a 10cm circle. Fry 2-3 minutes on each side until golden brown. Serve hot.

Makes about 12 pancakes.
