Glutamic acid is a non essential amino acid for the human body. Glutamic acid is found in a variety foods including soy sauce, dairy products, poultry, fish, eggs, kombu and in all meat.

The discovery of glutamic acid in 1907 by Kikunae Ikeda, a Japanese researcher and German Chemist Karl Heinrich Leopold Ritthausen resulted in a new flavor profile called umami, now one of the five basic human taste sensations.

Glutamic acid is often used as a food additive and flavor enhancer in the form of monosodium glutamate (MSG).
