How to Make a Kentucky Derby Pie

The excitement of watching the Kentucky Derby is unparalleled to any other sporting event.  Whether you are watching the race from home or at the track, your eyes are glued to the horses in anticipation on which one will cross the finish line first.  In addition to a mint julep, Derby pie is the second must-have treat on Derby day.  This pie is a hybrid of pecan pie with the addition of chocolate.  I have seen many versions made with walnuts too but pecan seems to be what is traditional.  If you have the pie crust prepped and ready to go, the filling just takes minutes to prepare before it is ready to go in the oven. After 40 or so minutes in the oven, it is ready to join the party.  Serve derby pie with a scoop of vanilla ice cream and homemade whipped cream.

Derby Pie

Ingredients:

2 eggs
1/2 (or 1 stick) unsalted butter, melted
1 cup sugar
1/2 cup all purpose flour
1 cup chopped walnuts
1 cup semi-sweet chocolate chips
1 tsp. pure vanilla extract
1 pie crust, store bough or homemade

*Note:  If you are a fan of Kentucky bourbon, it is only appropriate to add a couple splash to the pie filling to take the flavor up a notch.
