If you are looking for a quick and easy dinner that is as healthy as it is tasty, this spinach and potato soup is perfect.
Try it with a loaf of crusty bread and a bottle of wine to make a sweet dinner for two , fresh from the garden!
1 tsp olive oil
1 medium onion, chopped ( about 3/4 cup)
3 garlic cloves, minced
1 tsp basil or thyme, dried
Salt to taste
1 medium size potato, peeled and chopped (about 1.25 cups)
4 cups water
1 tsp red pepper flakes or less to taste
4 cups fresh spinach leaves, washed
Juice of lemon to taste
