Light and Healthy Almond and Apricot Quinoa Salad

Start off the new year right with this light and healthy almond and apricot quinoa salad from Mother Rimmy.  Quinoa is a seed that hails from Peru and packed with all kinds of vitamins, minerals, and protein.  Add in no-sugar added dried apricots and almonds tossed in a tasty vinaigrette and you'll have one delicious dish.

Almond and Apricot Quinoa Salad

Ingredients:

1 cup quinoa, rinsed and drained
2 cups water
1/4 cup almonds, sliced and toasted
1/4 cup chives, finely chopped
1 tablespoon olive oil
2 tablespoons white wine vinegar
1 teaspoon dijon mustard
1 teaspoon sugar
 
Directions:
 
Bring water to a boil and add quinoa. Cook for 10 – 15 minutes over medium low heat until water is evaporated and quinoa is tender.
 
Allow quinoa to cool, then combine with apricots, almonds and chives.
 
Combine olive oil, vinegar, mustard and sugar in a small bowl.
 
Combine with quinoa and chill for 30 minutes.
