Mushroom Crepes with Vegan or Vegetarian Sauce

Ingredients

200g whole wheat flour *
250 ml water
2 eggs
Oil – for frying
300g mushrooms (Portobello, Champignons)
½ cup canned corn
1/2 cup chopped parsley
1/2 cup chopped dill
1/2 cup white wine
1 big onion, chopped
sea salt, to taste
1/3 tsp ground pepper
1/2 tsp ground coriander
1tsp sweet paprika
1 tsp garlic powder
* The desired consistency should be like yoghurt – not too thick, not too thin.
You may need to add more flour or water, it depends.
Vegetarian sauce:
½ cup low fat sour cream
2-3 garlic cloves, mashed
a pinch of sea salt
1-2 tbsp chopped chives
Vegan sauce:
2-3 garlic cloves, mashed
2 tbsp water
a pinch of sea salt
1 tsp olive oil
4 tbsp tomato juice (or you can scoop out the inside of 1-2 soft tomatoes)
1-2 tsp chopped chives

This recipe has eggs in it. It can't be vegan if it has eggs in it.

I didn't say the recipe was vegan, just the sauce can be vegan or vegetarian.

It doesn't matter whether the sauce is vegan or vegetarian, if the pancakes are not - then the dish cannot be vegan :-).
The pancakes look delicious and it's easy to substitute eggs with flax seeds or other ingredients. Pancakes - or any baked goods - don’t require dairy-based milk, dairy-based butter, or chicken’s eggs. Just use flax seeds, apple sauce, vinegar+baking soda, or an egg replacer.

OMG people...she didn't say the crepes were VEGAN...she said the SAUCE was vegan. READ before you POST. Seriously.....!!!!!

Thanks Peggy!! That's what I keep telling them! I made two types of sauces because some vegetarians eat eggs but are dairy free so the crepes contain eggs but you can use a dairy free sauce. Never said the recipe was vegan :)

I'm going to try these using rice wraps instead of crepes and just use the vegan sauce for dipping. Hopefully it turns out! Fingers crossed!!
