Strawberry and White Chocolate Muffins

Ingredients
1 cup plain flour
2 teaspoons baking powder
1/4 cup sugar
1 egg
2/3 cup canola oil (or any oil with little flavour)
2/3 cup milk
1/4 gram 150 block of white chocolate, chopped into inch (ish) cubes
12 strawberries, washed and quartered
Preparation

Preheat oven to 180ᵒC.

Sift dry ingredients

Finally stir in white chocolate.

Spoon into muffin tins lined with cup-cake papers

Arrange strawberry quarters lightly on top to make a cross.

Cook for 20 minutes, or until centre springs back when touched.

About
You could make the same recipe with double the quantities and bake it as a cake in a 22cm round for about 40 - 45 minutes. Great on their own, or sweet and delicate enough to use as a dessert with strawberries and cream on the side.

This recipe is wrong, not enough Flour!

You're right, that recipe is wrong. When I first listed it, I had an error, but it was corrected. It is in fact a small quantity, and the 2/3 cup measurements should read 1/3 respectively. Please also note that I use the metric scale - 1 cup = 250ml
