Lox

Ingredients

2 1/2 pounds Salmon fillets
2 tablespoons Sugar
2 tablespoons +2 tsp kosher salt
1 tablespoon Hickory smoked salt

Preparation

Mix dry ingredients and rub over salmon. Put salmon in a double plastic bag and seal. Refrigerate. Turn over once a day for 5 days. Remove and dry with a paper towel.

Sounds really simple, but how would you slice it thinly enough to be like kosher lox? I would love to try it, for the simple fact that it would be less expensive than store bought and I love smoked salmon.
