Penuche

Ingredients

2/3 cup butter
1 cup brown sugar (light, not dark)
1 1/2 teaspoons vanilla
1 1/2 cups pecans or walnuts, chopped (optional)

Preparation

In the microwave, melt butter in a large microwave safe bowl. Add brown sugar and condensed milk stir and heat on high for 7-9 minutes. Add vanilla. Beat with an electric mixer for 3–4 minutes until smooth and shiny. Fold nuts into the mixture. Spread into a buttered 9x9˝ pan. Let cool, then refrigerate for 2–3 hours. Cut with a sharp knife dipped in hot water.

Rich, penuche is one of my favorite candies. I, too, think of my mom whenever I have it because we used to buy big chunks of it wrapped in waxed paper from a local candy shop when I was little. I might make this to add to my Christmas gift baskets this year! Thanks

My mom was the absolute king of making candy around the holidays. I could never get her recipes to work as I had a hard time with hard ball, soft ball, etc. But since I love Penuche, did some poking around and found this method and with a few changes have a recipe that tastes great. The official title of this recipe is "Penuche - not Mom's but still good"

Notes: Could use chopped peanuts if you have a nut allergy. Will soften some as it warms so keep it refrigerated
