Quick Pickled Cucumbers

Ingredients

2 Kirby cucumbers cut into 1/8-inch thick slices
1 tablespoon sugar
1 teaspoon kosher salt

Preparation

In a bowl, toss cucumbers with the sugar and salt until well coated

Let sit for 5-10 minutes

If cucumbers are too sweet or salty, place in a colander and rinse off the seasoning, then dry with a towel. Add more sugar or salt as needed. Serve after 5-10 minutes or refrigerate for up to 4 hours.
