These easy Bacon-Wrapped Avocado Slices are the perfect snack if you're following a low-carb, high-fat Keto diet. You definitely do not want to overindulge in these babies if you're sucking down carbs or the pounds will pack on faster than a pig can squeal! These take just minutes in a skillet and come out wonderfully crispy on the outside and velvety smooth on the inside.
If you need to get more healthy fat into your daily count, serve with a Paleo salad dressing for dipping. I love Primal Kitchen's Green Goddess and Ranch dressings.
Easy Keto Bacon-Wrapped Avocado Slices
Gluten-free, low-carb
Makes 4 servings
1 large, firm avocado, cut into 8 slices
8 slices of bacon (look for zero sguar added bacon)
Paleo dressing for dipping (optional)
Cut avocado into slices and wrap each with a strip of bacon.
Heat a skillet over medium-high. Place each wrapped avocado in the skillet with the bacon ends down. Cook until, turning every minute or so, to brown each side.
Remove to a paper towel-lined plate and serve while warm.
Save the rendered bacon fat in a glass jar for future use.
