Quick and Easy Chicken Burger That Will Rock Your World

Christmas shopping requires fuel to get through the experience.  When I survive a long day of fighting the crowds, I know that this recipe is quick and easy to whip up when I get home, no matter how tired I am. A burger is made lighter by using chicken instead. Then, add to it the richness of avocado and tangy Monterey Jack cheese. It's too delicious to be this easy to make a meal. One of the best tips I can share is to use the chicken breast and pound each one as thin as you can. So, for my littles, I can make 3 chicken burgers out of one 1/2 a breast. It also makes the cook time super short, so dinner is even faster to the table. It's foolproof! 

Quick and Easy Chicken Burgers

3 lbs. boneless chicken breast
Healthy handful of cilantro – chopped
4 oz. Monterey Jack cheese – shredded
Dashes of ground cumin
Dashes of garlic powder
1 tsp. of brown sugar
½ tsp. salt
¼ tsp. black pepper
Zest and juice of 1 lime
1 lb. bacon
Your favorite bread for the burger
Sliced avocado – for the burger
Sautéed Onions:
1 large Spanish onion - sliced
1 jalapeño – chopped with seeds
1 tablespoon of vinegar
1 tsp. brown sugar
1 tablespoon ketchup
Drizzle of olive oil
