Craving Gluten-Free Apple Cider Doughnuts Right Now

Apple cider doughnuts are a fall tradition.  This vegan and gluten-free version is baked instead of fried so you can save on calories but still enjoy a doughnut or two.  Oat flour forms the base of the batter and a combination of baking soda and baking powder helps them rise.  While apple cider is included in the recipe, applesauce is also added to provide moisture and an extra kick of apple flavor.  We all know that homemade doughnuts are not complete without a glaze.  These particular baked doughnuts are topped with a spiced glaze flavored with cinnamon and nutmeg.  You can also roll them in cinnamon sugar.  If you find yourself having a slow Sunday or an extra day off from work, break out the mixing bowl, turn on the oven and make these tasty fall doughnuts.

Gluten-Free Apple Cider Doughnuts

Makes 18 mini doughnuts

Ingredients:

For the doughnuts:
1 1/2 cups gluten-free oat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ginger
1/8 tsp cloves
1/4 cup brown sugar
1/4 cup apple sauce (unsweetened)
1 Tbsp olive oil
1/3 cup apple cider
1 tsp vanilla

For the glaze:
1 cup powdered sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1 to 2 Tbsp apple cider
