The thing I love about stuffed bell peppers is that you can fill them with just about anything and they will be delicious.  Whether you have leftover rice, pasta, quinoa, ground meat, or vegetables, just to name a few, they will be tasty in a pepper.   I like to use red, yellow or orange peppers because they are sweeter and less bitter than the green. The video below shows you how to prepare this easy weeknight dish three different ways so your family will never get bored of this meal.

Italian Stuffed Peppers

Ingredients:

2 to 3 bell peppers
1 tbsp oil
1 small onion
2 cloves garlic, minced
1 lb hot Italian sausage, casings removed
3/4 cup rice
1 1/2 cup vegetable/chicken broth
1 cup tomato sauce
2 tsp Italian seasoning
salt and pepper
1 cup mozzarella, shredded
1/4 cup parmesan, freshly grated

Vegetarian Stuffed Peppers  

Ingredients:

2 to 3 bell peppers
1 tbsp oil
1 small red onion, finely diced
1/2 jalapeno, minced
2 cloves garlic, minced
1/2 cup quinoa
1 cup vegetable/chicken broth
1 can black beans, rinsed and drained
1 can diced tomatoes 1 tbsp taco seasoning
salt and pepper
1 cup cheddar, shredded

Mediterranean Stuffed Peppers 

Ingredients:

2 to 3 bell peppers
2 tbsp oil
1 small red pepper, finely diced
1 small zucchini, finely diced
1 clove garlic, minced
1/4 cup kalamata olives, pitted and chopped
2 cups cooked orzo/quinoa
1 cup cooked chicken, finely diced
1/2 lemon, juiced
1 tbsp red wine vinegar
2 tsp Greek seasoning
1 tbsp fresh parsley, chopped
salt and pepper
1 cup feta cheese
